Ingredients:
1 cup of red lentils
4 tablespoons of olive oil
1 large chopped onion
1 small potato in small cubes
1 medium carrot in small cubes
½ tablespoon of cumin
½ teaspoon of sweet paprika
½ teaspoon of hot spice flakes
1 tablespoon tomato paste
4-5 cups of vegetable broth (or chicken broth) homemade of from a biological cube
1 tablespoon of butter
2 tablespoons of fresh mint, only the leaves, or 1 teaspoon of dry and graed mint
salt and pepper
the juice of one lemon
How to do: In a deep saucepan we heat the olive oil in medium temprature and we saute the onion for 2-3 minutes. We add the lentiles, the potato, the carrot, the cumin, the paprika, the spice flakes and we alligate with a wooden spoon for a minute. We drop in the tomato paste, the groth and put the cap in the saucepan. We boil the mixture about approximately 30 minutes until the ingredients are totaly melt. We take the saucepan from the high temprature and we melt the soup. We add the butter, the mint, the salt, the pepper and we alligate. We heat again the food until it starts to boil. We serve the soup in a bowl with a bit of lemon juice.
TIP:If you have plenty of time you can saok the leutiles for at least 2 hours before cooking. After this the lentiles are going to be boiled easier.
